These super easy cookies are the perfect quick and healthy breakfast!
Yield: 12 Cookies
Freezer Friendly Breakfast Cookies

Ingredients
- 2 1/4 cup Old Fashion Oats
- 1 cup Whole Wheat Flour or regular flour
- 2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 cup Applesauce
- 1/2 cup Honey
- 1 Egg large
- 2 tsp Vanilla Extract
- 4 tbsp Butter melted
- 1 cup Grated Zucchini or grated carrots (squeeze of excess liquid)
Instructions
- Preheat oven to 350°
- Stir oats, flour, cinnamon, nutmeg, baking soda and salt together in a large bowl.
- Melt butter in a small bowl.
- Add in the applesauce. honey, egg, vanilla extract, melted butter, and finally the grated carrots or zucchini to the bowl and mix together well.
- Use a large trigger scoop to drop dough onto baking sheets with oil or parchment paper. Make sure to flatten out cookies so that they bake evenly!
- Bake 15-20 minutes until the tops are golden brown.
- Let these cool on the pan then place flat into a freezer bag. Don't stack them on top of each other because they will more than likely stick together! Once they are fully frozen you can combine the cookies into one bag.
- REHEATING + PREPARING
- You can pop these in the microwave for 30 seconds to a minute or pull them out of the freezer the night before or even a couple hours before eating!
Notes
GLUTEN-FREE ALTERNATIVE:
– Swap the oats with your favorite gluten-free oats and flour!
DAIRY-FREE ALTERNATIVE:
– Swap butter for margarine or safe alternative butter.
