Freezer Friendly Bourbon Chicken

Bourbon Chicken

Ingredients

  • 4 lbs Chicken Thighs Skinless Boneless
  • 2 tsp Ground Ginger
  • 1 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 2/3 cup Soy Sauce
  • 2/3 cup Apple Juice
  • 2 tbsp Vinegar
  • 1 cup Brown Sugar tightly packed

Instructions

    1. Cut up the chicken into one-inch cubes and put in the bag.
    2. Mix the ginger, garlic, pepper, soy sauce, apple juice, vinegar, and brown sugar in a bowl then dump into the bag and seal.
    Preparing:
    3. Thaw for about 24 hours or in a bowl of cold water for a couple of hours. (More on this in the fixing the meals section!)
    4. Dump in pot (do not add cornstarch or water) and cook on high pressure/manual for 3 minutes. Do a 5-minute natural release.
    5. Open the lid and if you want to thicken the sauce turn on the sauté option.
    6. Mix the corn starch and water together thoroughly in a small bowl. Then pour into Instant Pot
    7. Mix into the chicken and sauce and let cook until the sauce thickens (usually 2-3 minutes).



Notes

CROCKPOT INSTRUCTIONS:

1.Cook for 4-6 hours on low.

2. If you want to thicken the sauce put the bourbon chicken mix in a large skillet and turn the heat on medium/high.

3. Mix the corn starch and water then pour the mixture into the pan and cook until thickened. Usually only takes 2-3 minutes.

GLUTEN ALTERNATIVES:

Since Soy sauce contains wheat switch to using Coconut Aminos instead!
