Sausage Sweet Potato Breakfast Casserole

Ingredients

  • 1 large sweet potato
  • 1/2 onion
  • 8 oz mushrooms
  • 1/2 cup chopped kale
  • 1 lb ground sausage
  • 8 eggs
  • 1/4 cup milk
  • 1 tsp seasoning salt
  • 1 tsp garlic powder
  • 1-2 cups colby jack shredded cheese

Instructions

    PREPPING:

    1. Brown sausage and set aside to cool.

2. Dice sweet potato, you can peel it if you like or leave it on! Add to casserole dish.

3. Dice mushrooms and onion and add to dish.

4. Chop kale if needed and add to dish.

5. Crack eggs into a bowl and mix in with milk. Add in seasoning salt and garlic powder.

6. Add cooled sausage to the bowl and mix thoroughly.

7. Once it's well mixed add to casserole dish.

8. Cover top with cheese then cover with plastic wrap and aluminum foil then freeze.

TO COOK:

9. Thaw for 24-48 hours or cook from frozen.

10. Preheat oven to 400°F

11. Bake for 20-30 minutes from thawed or if frozen bake for 1 hour covered then 20 minutes uncovered.
