Classic Breakfast Burrito
Ingredients
- 1/2 lb ground sausage
- 1 1/2 cups frozen diced potatoes
- 1/2 large green bell pepper, diced
- 1/2 onion, diced
- 5 eggs
- 1/4 cup milk
- 1/2 tbsp seasoning salt
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 8 burrito size flour tortillas
- Olive Oil
TIP:
- If you prefer bacon over sausage you can grab 1.5 oz of bacon bits to mix in instead!
Instructions
1. In a large pan cook sausage, drain and set aside to cool.
2. Dice onion and bell pepper.
3. Add frozen potatoes, diced onion, and diced bell peppers in a covered pan on medium heat and add seasoning salt. Cook until potatoes are slightly tender.
4. Mix the eggs and milk then scramble in a separate hot pan.
5. Combine sausage, potato, bell pepper, onion mix with eggs and cheese in a bowl.
6. Lay out the tortillas and scoop the mix into each one. Then wrap!
7. Wrap burrito in aluminum foil and put in a freezer meal bag and freeze.
REHEATING
Unwrap and microwave on high for 1-2 minutes, until warmed through, if you notice the bottom is soggy flip halfway through heating. To do multiple you can heat in an oven at 350F for 12-15 minutes.
Notes
DAIRY-FREE ALTERNATIVE:
- Use your favorite dairy-free milk and cheese, you can omit the cheese if needed. Nutritional Yeast can be used as well to give it a cheesy taste.
GLUTEN-FREE ALTERNATIVE:
Swap for a gluten-free tortilla and you are good to go!
RECIPE TIP: Heat the tortillas in the microwave just a bit to make them easier to roll!
