Breakfast Biscuit Cups Recipe

Ingredients

  • 1/2 lb sausage
  • 4 eggs
  • 1 tbsp all-purpose flour
  • 1 cup milk, divided
  • 1 1/2 cans refrigerated biscuits (12 Biscuits total)
  • Salt and pepper to taste
  • 1 cup shredded Colby- monterey jack cheese

Instructions

Mix eggs together with 1/4 cup milk and scramble on stovetop.

Brown sausage and leave sausage and grease in the pan!

On medium heat stir in flour to the sausage pan and gradually add 3/4 cup of milk and stir vigorously! Bring to a boil and keep stirring until it starts to thicken then set aside. NOTE: If you don't have a decent amount of grease in the pan you can supplement with butter!

Mix eggs, sausage, and gravy together in a bowl.

Grease each cupcake cup then press a biscuit into the bottom of each cup. Try to make it into a tiny bowl!

Put the egg, sausage, and gravy mixture into each biscuit then top with cheese.

Bake for 15-20 minutes then set aside to cool.

Once cool wrap in plastic wrap then place inside of a freezer bag and seal!

REHEATING:

Simply pop in the microwave from frozen for 2-4 minutes and enjoy!

Notes

DAIRY-FREE ALTERNATIVES:

-Swap for your favorite dairy-free milk!

Note: You will need less milk when making the gravy with dairy-free milk!

GLUTEN-FREE ALTERNATIVE:

-Swap flour for your favorite gluten-free all-purpose flour (I like using the King Arthur brand) and gluten-free biscuit dough or another readily available gluten-free dough. If you use something thinner than a biscuit you might have to cut cook time down by a couple of minutes!
