Chewy Chocolate Snack Bars

These chewy chocolate snack bars are the perfect healthy snack! They are easy to make and customize for your kids. All you need is 8 basic ingredients and theres no baking needed!

The best part of this recipe? They will stay good in the freezer for up to 3 months!

Ingredients

  • 4 cup Sunflower seeds
  • 1/4 cup Dried cherries
  • 1 1/2 cup Rolled oats
  • 8 Whole dates, pitted
  • 1/3 cup Coconut oil, melted
  • 1/2 tsp Salt
  • 1/2 cup Cocoa powder (Topping)
  • 1/4 Coconut oil, melted (Topping)
  • 1/4 cup Honey (Topping)
  • Sprinkles (Optional Topping)
  • Coconut shavings (Optional Topping)
  • Sea salt (Optional Topping)

Instructions

1. Soak dates for 5 minutes in warm water then drain. Remove pits if needed!​

Add  1/4 cup dried cherries, 1 1/2 cup rolled oats, 8 whole dates, pitted, 1/3 cup meled coconut oil, 1/4 cup sunflower seeds, and 1/2 tsp salt to a food processor or blender. Blend until mixture is sticky!​

2. Set aside ¾ cup granola mixture and pack remaining mixture in to a 8x8 pan lined with parchment paper.​

3. In a small bowl add 1/2 cup cocoa powder, 1/4 cup melted coconut oil, and 1/4 cup honey. Mix together until smooth!​

4. Spread the Chocolate mixture over the granola base evenly. Top with remaining granola mix and any of your optional toppings.​

5. Once it’s set cut into bars and add to a freezer bag!​

Note: You can store these in the fridge for a couple of weeks or the freezer for up to three months.

Notes

FLASH FREEZING:

You can flash freeze by placing the ingredients on a pan with parchment paper and sticking it in the freezer 20-40 minutes until the items are frozen. Unless instructed not to, make sure the food isn't touching so that they don't stick together when you go to take them out later!
