Freezer-Friendly Salsa Chicken Recipe

This super simple 4-ingredient salsa chicken is seriously so delicious! Perfect for an easy crockpot or Instant Pot dinner.

Prep ahead and freeze for later or cook it right now! Serve this recipe over rice, with tortillas, or chips. Add your favorite toppings and enjoy!

  • 2 lb Chicken breast
  • 16 oz Jar of salsa
  • 1 can Corn
  • 1 can Black beans
  • Optional toppings:
  • Sour cream
  • Shredded cheese
  • Avocado
  • Lime



    1. Drain and add corn and black beans to the bag.

    2. Dump salsa in the bag.

    3. Add chicken whole to the bag and seal and freeze.


1. Thaw for about 24 hours or in a bowl of cold water for a couple of hours. (More on this in the fixing the meals section below!)

2. Spray your Instant Pot with cooking oil.

3. Dump into the Instant pot and cook on manual/pressure cook for 10 minutes. Then do a quick release after waiting 10 minutes.

4. Shred chicken with a stand mixer or hand mixer and then mix back in.

5. Serve and enjoy!

Freezer Prep Tip: Make sure to always drain your cans (liquid expands in the freezer and can cause the bag to bust) and freeze the bag flat so you have more freezer space!
